Easy, no-bake snack recipes are a boon when you want to spend time with your kids and give them a healthy, nutritious meal at the same time. The below-mentioned recipes are delicious, quick, and easy to make. You can also involve your little ones in the process and give them a perfect introduction to the kitchen.
1. Hummus with veggies
To make this snack, you will need one can of rinsed and drained chickpeas, half a cup of lemon juice, one garlic clove, two tablespoons of olive oil, two tablespoons of tahini, and some parsley. Put everything in the food processor except parsley and blend until smooth. You can add little water if the consistency is too thick. Spoon out the hummus into small bowls and garnish with chopped parsley. It goes well with julienned cucumbers and carrots.
2. No-bake orange cheesecake
Your kid will love to make this cheesecake with you. Take 15 digestive biscuits, 6 tablespoons of melted butter, 400 grams of cream cheese, zest of three oranges, 200 grams of mascarpone cheese, 100 grams of caster sugar, three tablespoons of milk, and a small pot of double cream. Crush the biscuits lightly in a bowl. Add melted butter and mix thoroughly. Spread the mixture evenly in a cheesecake tin and press lightly so that it sets. Refrigerate it for half an hour. Mix the cream cheese, mascarpone cheese, milk, and orange zest in a different bowl. Now add the double cream to this mixture. Remove the biscuit base from the fridge and cover its top with this filling. Refrigerate for at least four hours and enjoy!
3. Chicken pesto wrap
Replace soggy sandwiches with warm tortilla wraps stuffed with chicken, cheese, and vegetables. For this, you need one cooked and shredded chicken breast, two tablespoons of mayonnaise, two tablespoons of pesto, two thin slices of cheese, two flour tortillas, a handful chopped red pepper and sweet corn kernels, lettuce leaves, and seasoning to taste. Mix the chicken, mayonnaise, and pesto; and add some seasoning. Lay the cheese slices between the tortillas and layer with the chicken mix, pepper, sweet corn, and lettuce. Roll tight and they’re ready to be savored!
4. Peacamole
Kids of all ages will love this nutritious variant of the classic guacamole. Take 200 grams of frozen peas, two ripe avocadoes (stoned and peeled), juice of two limes, and a small bunch of coriander. Add enough boiling water to the peas, allow them to defrost, and drain well. Add avocadoes, lime juice, and salt to the peas, and mash roughly. Garnish with chopped coriander right before serving. It tastes excellent with potato wedges.
